2020 Chardonnay Reserve
The 2020 vintage was one we will never soon forget, for a number of obvious reasons, but also due to a fickle year with mother nature. The grapes for this wine are sourced only from the best site of the Castalia Estate, the highest elevation planted up by the barn. It is due to this elevation that the fruit survived the great frost of 2020. The fruit was hung to perfection before being pressed and settled in a tank and then immediately into oak barrels for fermentation and aging. The barrel profile was all new French oak, with 30% new oak, and 30% one use oak, and 60% neutral barrels. After fermentation the wines were not racked at all and were left on fermentation lees for stirring to build richness and structure. The barrels were stirred every other day post fermentation for 2 months with a total barrel aging of 10 months. Attention to detail with acid balance, and a very cool cellar resulted in a very slow ML completion. This vintage shows delicate spice and a slightly firmer hand with the alcohol. Slight nuances in oak selection were key in order to maintain the oak fermented character of the brand without throwing the balance of the wine.
